French Bean Eggs


Inspirations - I go for everything simple and fast and this dish is definitely it. Kinda boring if we always just fry the egg. There are loads of variations to frying eggs. This time, I am using french beans. See my previous posting for Eggs with preserved turnips ("chai poh)

Anyway for this, as you can see, we only need 2 or 3 eggs (put some salt & pepper and beat) and chopped french beans.

Simple steps -

1) Oil in pan. When hot, put in the chopped french beans. Stir fry for 3 minutes.


2) Then add egg over it and spread to make sure egg coat all the french beans. Let it sit for 2 mins on medium to high fire. Then flip it over and in 2 mins, it's ready. Fast right??


3) Voila! So fast, so simple! Ready to eat! Yummy! Yummy! My stomach growling cos it is lunch now for me now!

Egg Starters


Ok...I have not seen this in Malaysia so naturally I was kinda curious on exactly what this is, how it taste blah, blah, blah. Essentially this is the healthy version for eggs as it is fat free and cholesterol free. Good alternative huh for the health conscious. Don't ask me what it is made of bcoz I have really no idea. But I decided to cook this and see if it is like the real thing. Inside, it is just like a milk-liquid but yellow in colour.

So, I am making some eggs with chives and crawfish (this is not crayfish and really I don't think we have crawfish in Malaysia or at least I have not seen). Anyway, it looks like a tiny version of a lobster and the piece of meat is so small. A lot of effort to get a tiny piece in yr mouth.

Crawfish meat which I patiently remove from its shells. It looks like tiny prawns right?

Anyway, so I just stir-fry the chives and the crawfish and then add the egg starters for kinda of an omelette eggs style.


Verdict - Actually the taste is pretty close. Definitely, don't mind having it as a healthier substitute but like everything healthy, there is bound to be something missing. And for this, I guess it would be the aromatic smell of eggs. Other than that, the texture and taste is all fine but I still love the smell of "real" eggs especially as it hits the oil for a simple "ho pau tan" (purse egg).

Chai Por Fried Eggs


Inspiration - nothing really, kinda tired of fried eggs or the onion fried eggs and I think Chai por (pronounced in hokkien) eggs are a nice twist to ordinary fried eggs. Now, I need to find out exactly what "chai por" is in English - hmmm could be some sort of radish or I really am not sure. Do help if any of you knows.

Simple ingredients -
1. Chai Por - you can buy the chopped ones or they do come in strips inwhich you will have to chop chop yourself.
2. 2-3 eggs
3. some sliced garlic

Simple Steps -

1. Get all the ingredients ready. It is so simple, 2 main ingredients and garlic is just to make it more fragrant, hopefully.

2. Put oil in pan (non stick pan) and stir fry garlic till fragant, And then add in the chopped chai por and continue to stir fry.



3. Add the egg into pan and spread it flat. Make sure fire is medium, just incase it burns the bottom too fast and the egg is still not cooked.



4. Try to flip over the egg without breaking them up. Sometimes you'll get it, sometimes you won't. No matter it's still tasty. Voila! Ready to eat! Yum Yum.
