Bread & Butter Pudding

Inspiration - I heard that it is very easy to make, especially when you have day old bread. So I have been itching to make it. I have some leftovers of organic whole wheat bread and I really wanted to get rid of it. So I bravely ventured into making bread and butter pudding even though I am not a fan of this dessert.
Ok the simple ingredients -
1) Bread - 5 slices
2) Butter
3) Milk
4) 2 eggs
5) Raisins (and I even added some cut peaches)
6) 1 tsp of vanilla essence
I read all I needed to do was this -
1) Cut the bread into triangle slices and put some butter on each slice and arrange on a baking dish.
2) Then mix milk and eggs with vanilla extract.

3) Then add the mixture onto the bread. Put the raisins on top.

4) Place the baking dish onto a larger baking dish filled with water. This is to ensure that the pudding does not burn. Bake in oven for 30 minutes.


5) This is what turned out. Well..... it did not turn out! I am so dissapointed. The bread was just soggy and it did not taste good at all. Well, I don't really know what I did wrong.

Hubby-D was nice and said it is not too bad and even ate it for breakfast the next day. I tried but I knew it was really not good. Anyone out there - Help! What did I do wrong? :)

hmm...too much liquid perhaps? the bread was supposed to soak up almost all of the mixture instead, I reckon.

Hi Anonymous - Not sure, actually I was thinking, not enough liquid cos the bread I used is super wheat bread and it seem to have not been affected at all by the milk I added.

Hi Lee Ann - I baked it at 350'F. Maybe it was just not meant to be :)

hmm...I have baked bread pudding before last year. It's been awhile since I last baked again. Maybe u can try blend all the ingredients in the mixer, which was I did. I used SCS butter and HL milk. :)

Oh I love to eat fish. Seeing your promfret makes me wants to try.

Hi Cendrine - That's a good suggestion. I remember eating a bread pudding that is almost like a cake texture, I guess they blended the ingredients. I will try it one day.

I baked mine at 375F. I did mine with 10 slices of white bread. You only need a quartz of whole milk (not low fat) and a cup of heavy cream. I used a lot more eggs, it is 5 eggs plus 4 yolks. You are trying to get a custard mix. I think yours is too watery and doesn;t have enough eggs for the mix to coagulate. Hope that helps.

i know what u did wrong. u only baked at 30min. i google-ed for the recipe n realize most of the recipe baked for at least 1 1/2 hours at 170Celcius. I tried baking bread pudding with chopped chocs n bananas ( i hate raisins) just now.check it out at my facebook. i posted the pictures there :)

Hi Lee Ann - Thanks, I think you may be right, it is the time in the oven and also I also think I did not use enough eggs. Let's see maybe one day I will try again!
